When I install NocoDB and grant it access to my root PostgreSQL database (I’m leveraging a pre-existing Postgres container with databases being used by other containers), will it store all of its data there - or create new databases as I create them within NocoDB itself?

NocoDB stores its meta information always in NC_DB. You can find details here Architecture overview

Newer tables created in the project (after connecting to external DB) will be part of external DB
